Cheesy Jalapeno Stuffed Bread Rolls

Makes: 11 bread rolls

Prep time: 35 minutes

Cooking time: 20 minutes

Ingredients

1 ½ cups milk, lukewarm

¼ cup vegetable or olive oil

1 tbsp sugar

1 tbsp dry active yeast

4 cups all-purpose flour

1 egg

1 tsp salt

1 packet Posh Poppa’s Cheesy Jalapeno Poppers

1 jalapeno, thinly sliced (optional)

2 tsp fresh or dried thyme

30g butter, melted

Method

  1. Preheat your oven to 200°C and grease a large skillet or baking tray
  2. Combine the milk, oil, sugar and yeast in the bowl of a stand mixer. Leave to sit for 5 minutes for the yeast to start to bubble.
  3. Add the flour, egg and salt and mix on medium speed with a dough hook for 10 minutes until a sticky dough forms.
  4. Transfer the dough to a lightly floured surface and divide into 11 pieces. Roll each piece into a smooth ball and flatten into a circle. Sit a Cheesy Jalapeno Popper on each piece and wrap the dough around the popper, pinching the edges together to enclose the popper.
  5. Place the dough balls in the greased skillet or baking tray and cover with a tea towel and leave to rise for 15 minutes.
  6. Press a slice of jalapeno into the top of each one if using, brush with the melted butter and sprinkle with thyme.
  7. Bake for 15-20 minutes or until golden brown. Leave to cool for a few minutes and enjoy warm.
