Poppers Shepherd's Pie

Serves: 6-8

Prep time: 25 minutes

Cooking time: 20 minutes

 

Ingredients

1 onion, diced

2 cloves garlic, minced

400-500g beef or lamb mince

1 carrot, diced

1 cup frozen peas

1 tbsp flour

2 tbsp tomato paste

1 tbsp Worcestershire sauce

250ml beef stock

1 tsp dried thyme

2 packets Posh Poppa’s Potato & Gravy Mashies

½ cup grated cheese

 

Method

  1. Preheat your oven to 200°C.
  2. Heat a drizzle of olive oil in a large skillet over medium heat. Add the onion and garlic and sauté for 3-4 minutes until soft.
  3. Add the mince, breaking it up as it cooks. Cook until lightly browned, draining any excess fat if necessary.
  4. Add the carrot and peas and cook for another 5 minutes until the vegetables are soft.
  5. Sprinkle over the flour and mix well. Stir in the tomato paste, Worcestershire sauce, beef stock and dried thyme. Simmer for 10-15 minutes until the liquid has thickened to a gravy consistency. Season with salt and pepper to taste.
  6. To assemble the pie, transfer the mince filling to a medium baking dish. Arrange the Potato & Gravy Mashies on top and bake for 15 minutes.
  7. Change your oven to grill and sprinkle the cheese overtop of the mashies. Grill for 3-4 minutes until the cheese is melted and golden brown. Dig in while it’s hot!
