1 tbsp butter
1 cup chopped spinach
1 cup cherry tomatoes
Cheesy Potato & Bacon Posh Poppas (air fried or deep fried)
1/2 avocado – sliced
1 half lemon

Melt butter in a pan on medium heat,
Whisk eggs with a fork in a bowl, add 1/4 cup spinach and pour the egg mixture into the pan – swirl and sweep continuously so egg evenly cooks.
Remove from heat when the egg thickens to your liking – keep warm. Slice the bigger cherry tomatoes in half and keep the little ones whole, season with pepper and salt. Heat olive oil in a pan and add the tomatoes. Cook until the tomatoes dimple and start to excrete their juices
Plate the egg scramble – adding the cooked tomatoes and sliced avocado. Top with the remaining spinach, cooked Posh Poppas and season with pepper and salt.
Optional: Sprinkle over parsley and drizzle over hot sauce.
