Serves 41 box of Posh Poppas Cheesy Potato and Bacon
4 slices of streaky bacon
2 tbsp white vinegar
Cos lettuce leaves or mesclun salad mix
Handful of cherry tomatoes, sliced in half
Parmesan cheese shavings
Ranch salad dressing
Cook the Cheesy Potato and Bacon Posh Poppas according to packet directions.
Cook the bacon to your liking, in a large skillet or under the grill. While the Posh Poppas and bacon are cooking, poach the eggs. Add the vinegar to a large pot of water and bring to the boil, then turn down to a low heat so that the water is just simmering. Crack one egg into a small bowl or ramekin, and pour the egg into the pot of simmering water. Repeat with the other eggs, and simmer for 3–4 minutes, or until yolk is cooked to your liking. Remove from the pot with a slotted spoon when done and place on a plate.
Serve as a large salad by arranging lettuce leaves on a large platter, and topping with Posh Poppas sliced in half, chopped bacon, cherry tomatoes, poached eggs, parmesan cheese and ranch dressing.
