1 cup short grain rice (or sushi rice), rinsed and drained
1 ½ cups cold water
¼ cup rice vinegar
3 tsp sugar
1 box of Posh Poppas Teriyaki Chicken with Rice
1 carrot, peeled and sliced into thin sticks
¼ cabbage, sliced thinly
1 cup edamame beans (shelled), cooked
Japanese mayonnaise, soya sauce to serve
Cook rice with water in a heavy bottomed saucepan, or rice cooker.
Once cooked, remove from heat and stir in rice vinegar and sugar. Keep covered with a lid and set aside.
Cook the Teriyaki Chicken Posh Poppas according to packet directions.
Divide the cooked rice between four bowls, and top with Posh Poppas sliced in half, sliced carrot, cabbage, edamame beans and pickled ginger.
Add the Japanese mayonnaise, and serve with soya sauce on the side.
