Serves 41 box of Posh Poppas Mozzarella Sticks, and sticky tomato sauce sachetFor the tomato soup:
1 tbsp olive oil
½ an onion, peeled and diced
4 cloves garlic, minced
400g can quality diced or whole peeled tomatoes
1 tbsp tomato paste
½ cup sundried tomatoes (drained of oil, diced small)
1 tbsp sugar
1 tsp sea salt (plus more to taste)
½ tsp ground black pepper
½ tsp dried oregano
½ tsp dried thyme
1 x sachet of sticky tomato sauce (from Posh Poppas box)
½ cup cream
Fresh herbs, chopped, to garnish
Make the soup by adding olive oil to a large saucepan over a medium heat. Add the onion and garlic and cook until soft and translucent. Add the can of tomatoes, tomato paste, sundried tomatoes, sugar, salt, black pepper, oregano, thyme and sticky tomato sauce, and stir to combine.
Simmer for 15 minutes, then carefully blend using an immersion blender, or leave to cool slightly and blend in a standard blender in batches. Make sure the mixture is not too hot while using a standard blender, and always have adequate ventilation in the lid.
Return soup to saucepan, add cream and season with salt and pepper to taste.
Serve drizzled with extra cream, and fresh herbs.Cook the Posh Poppas Mozzarella Sticks according to packet directions, and serve as dippers for the tomato soup.
